(aka Cloud Bread, aka Oopsie Bread)
There are many names for this bad boy but the long and short is that it is bread-like texture without the carbs. Perfect for a bun, pancake or pretty much anything dough-y you want to make sans carbs.
Ingredients:
- 3 eggs, separated
- 3 tablespoons cream cheese
- 1⁄4teaspoon baking powder
- 1(1 g) packet artificial sweetener
Directions:
- Preheat oven to 300degF
- Separate the eggs (yolks from white)
- In one bowl, mix together the egg yolks, the cream cheese and sweetener until there are no lumps
- In another bowl add the baking powder to the whites and beat the whites until they are fluffy and form nice stiff peaks
- Very carefully fold the egg yolk mixture into the egg whites until mixed but don’t over-mix, you want the air in there
- Spray cookie sheet(s) with pam or use parchment paper and scoop the mixture into even rounds on your cookie sheets, in whatever size you want
- Bake on the middle rack until they turn golden brown (usually about 20 mins)
- Remove from the pans and cool
When warm they are crumbly and similar to cake but when completely cooled their texture is more bread-like. After they are completely cooled you can seal them in a baggie or tupperware and store them overnight…they will become more bread-like.
One side will be roundish like a bun top and the other will be flat…the flat side is great for peanut butter and/or jam and/or toasting with butter!
